Super Salads

I am known among my friends for my delectable salads.  Not a bad thing.  When we have potluck dinners with friends I am usually asked to bring a salad (or my corn and black bean dip, I’ll share that another time).  When friends come over for diner as well, they usually ask if I’m making a salad.  One reason my salads are popular is that they are colorful.  Another is that I throw in an abundance of all kinds of fresh veggies and sometimes fruit.  I also have a no iceberg lettuce rule and use a mix of baby spinach, arugula, and other nutritious and tasty lettuces.  Being the “salad lady” helps keep me on track when I can’t always control what other foods will be served.  I usually have a large salad for lunch or dinner.  They are a great way to pack in a lot of nutrients.  So, be on the lookout for tasty salad creations.  Hopefully you’ll enjoy them too!
