Grilled Chicken Salad

I grill several chicken breasts marinated in Italian dressing or coated with an herb rub.  Throughout the week I use the chicken in recipes like this quick and easy to make salad.  Having the chicken ready and on hand makes it that much easier to keep on track with my healthy eating plan!  

  • 1 10oz bag romaine salad mix
  • 1 ½ cups shredded carrots
  • 1 cup slivered almonds
  • ½ cup light mayonnaise
  • ¼ cup crumbled blue cheese or feta cheese
  • ¼ teaspoon ground black pepper
  • 2 small lemons
  • 2 cups grilled or baked chicken
  1.  Fill individual plates or a platter with lettuce.  Top with carrots and almonds.
  2. In a small bowl stir together mayo, blue cheese, and pepper.  Squeeze juice from ½ of a lemon (about 1 ½ tablespoons) into mayo mixture.  Stir to combine.
  3. Roughly chop chicken and arrange over lettuce.  Cut remaining lemon into halves or wedges and serve with salad.  Top salad with dressing.
