Chickpeas are a fantastic source of protein. This salad is a great side or main meal for lunch.
- 2 15oz cans no-salt-added garbanzo beans (chickpeas). Rinse & drain
- 6 roma tomatoes, sliced
- 4 oz crumbled feta cheese
- ¼ cup lightly packed sliced basil or mint leaves
- 1/3 cup white vinegar
- ¼ cup olive oil
- 1 tablespoon sugar
- ½ teaspoon ground black pepper
- 3 pita bread rounds
- 1 7oz. carton hummus
- In a large bowl combine beans, tomatoes, feta, and basil. In a sealable container such as a screw-top jar combine vinegar, oil, sugar, & ground black pepper. Shake to combine. Pour over salad mixture.
- Grill pita bread rounds over medium heat 1 to 2 minutes or until warm and toasted, turning once halfway through grilling time. Transfer to a cutting board and cut each round into 6 wedges. Top wedges with hummus and serve with salad.
