Chickpea Salad

Chickpeas are a fantastic source of protein.  This salad is a great side or main meal for lunch.

  • 2 15oz cans no-salt-added garbanzo beans (chickpeas).  Rinse & drain
  • 6 roma tomatoes, sliced
  • 4 oz crumbled feta cheese
  • ¼ cup lightly packed sliced basil or mint leaves
  • 1/3 cup white vinegar
  • ¼ cup olive oil
  • 1 tablespoon sugar
  • ½ teaspoon ground black pepper
  • 3 pita bread rounds
  • 1 7oz. carton hummus
  1. In a large bowl combine beans, tomatoes, feta, and basil.  In a sealable container such as a screw-top jar combine vinegar, oil, sugar, & ground black pepper.  Shake to combine.  Pour over salad mixture.
  2. Grill pita bread rounds over medium heat 1 to 2 minutes or until warm and toasted, turning once halfway through grilling time.  Transfer to a cutting board and cut each round into 6 wedges.  Top wedges with hummus and serve with salad.
